Chindi’s restaurants are her passion projects, where she loves to recreate her personal memories of her journeys and the layered, nuanced flavours of Asian and continental recipes that she has treasured. In search of authentic recipes, customs and cooking techniques, Chindi has travelled the world – from the global culinary melting-pot of Vancouver, to the bustling streets of Singapore. Chindi also brings an abiding love for slow food practices that bring out the best flavours and textures from ingredients. She believes in eating fresh, locally sourced food. Her days in Vancouver spent browsing farmers’ markets and sourcing fresh salmon from the local fisherfolk led her to fall in love with the possibilities to continue that culture in the beautiful seaside town of Mahabalipuram
